Description
Cassia quills are s dark brown/red colour with a rough texture. They are rolled into thicker sticks compared to those of Ceylon cinnamon.
Its flavour is also more intense and almost bitter, which can lead to a “hot” aftertaste when used in excess.
Cassia is the ‘cinnamon’ found in commercially produced cinnamon buns, scrolls, raisin breads and cinnamon doughnuts.
The bolder characteristics in cassia will tend to dominate other ingredients, so add sparingly. Chefs often prefer cassia cinnamon in savory dishes such as meats and soups rather than the sweeter, milder Ceylon cinnamon.
