Organic Cassava flour is made by grating and drying the fibrous cassava root. Compared with other gluten-free flours, such as coconut or almond, it has a lower fat content. It is also very rich in carbohydrates.
A single cup of organic cassava flour (285 grams) has about 110 grams of carbohydrates, 5 grams of fiber, and 4.5 grams of sugar. It’s also rich in vitamin C, with one cup containing close to the recommended daily value.
Cassava flour has a fairly neutral flavour, with a slight earthiness to it. So, you shouldn’t be able to taste it when used in most baking recipes, depending on the other ingredients.
