How To Cook: Absorption Method
- Add unwashed arborio rice to a sauce pan with olive oil and lightly toast on a medium heat. (Tip, dont have the heat too high, we dont want to fry the rice)
- Stir the rice over medium heat for 2-3min or until aromatic.
- Add in water and salt (or stock) at a ratio or 2:1 fluid to rice. Turn the heat to high and cover with a lid.
- Once the water is boiling, mix the rice then turn heat to low and cook for 15-18 min or until water is fully absorbed. Do not lift the lid during cooking or stir any more
- Turn the heat off and let the rice rest with the lid on for 5 min
- Gently fluff with a fork before serving.
