Our 00 (Double O) Strong Flour has a 14% gluten strength. When baked at high temperatures in wood-fired ovens, it yields a crispy, crackly pizza crust with moderate chewiness.
Flour is classified based on the coarseness of the grind, and 00 flour is the finest grade available, making it ideal for certain baking applications.
While 00 (Double O) strong flour is generally used for pizza and pasta making recipes, it can be used for bread making. One thing to keep in mind is that 00 flour absorbs water differently than other flours.
So, for bread making, you will need to adjust the hydration levels. Check the dough’s consistency; it should be slightly tacky but not wet.
Storage: Storing 00 flour is no different than storing all-purpose flour. Keep it tightly sealed in a cool place, where it will keep for 6 to 8 months.
