The organisms in active dry yeast consume sugars and starch to produce carbon dioxide and alcohol. This gas is what bakers use to make certain baked goods rise.
Active dry yeast is used often in bread making and pizza doughs and has a longer shelf life than fresh yeast.
How To Proof (Bloom) Dried Yeast:
- In a bowl, pour about ¼ cup of luke-warm water (not hot) and add a teaspoon of sugar, and the yeast the recipe.
- Give the mix a quick stir, then let it sit for 5–10 minutes. If the yeast is alive, it will begin to foam and bubble.
- Once fully bloomed, add the yeast mixture to your dough mix.
- If the yeast doesnt bloom within this period, it is and indicator that it is old/not as active. The recipe may still work, but extra proof time may be needed.
Storage: Store in an airtight container in a cool, dry spot away from direct sunlight. Store in the fridge for longer shelf life.
