Black rice is also known as purple rice or “forbidden rice”. The term forbidden rice comes from the fact that black rice is sooooo unique and nutritious that only royalty we permitted to eat it.
Black rice has a mild, nutty flavor and chewy texture as well as being a rich source of protein (9g per 100g as opposed to 7g for brown rice) and iron, an essential mineral for carrying oxygen throughout your body.
How to cook: Absorbtion method
- Rinse black rice with running water for a few seconds
- Black rice cooks with a 1:2 ratio of rice to water or stock. So, for 1 cup of rice you will need 2 cups of water.
- Bring water to the boil and cook for 30-35 min (with the lid on) or until rice has fully absorbed the water and is tender and chewy. You may need to adjust slightly if rice is still not fully cooked. Add a few tablespoons of water in if rice is too dry.
- This method of cooking will give you a nice “sticky” cooked rice texture.
How to cook: Bung it in a pot method
- Rinse black rice with running water for a few seconds
- Put 5-6 part of water or stock in a pot along with 1 part rice and bring to the boil
- Cook for 30-35 min or until tender and chewy.
- This method of cooking will yield a non “sticky” rice consistency
