Black-eyed peas (sometimes called black-eyed beans or cowpeas) are a small white/cream coloured bean with a distinctive black spot. They are packed with protein, fiber & carbohydrates making them a great addition to a healthy diet.
You can use add them to soups, stews & salads or bake & season them for a delicious side dish. The dried beans will need to be pre-soaked before cooking.
How To Cook Black-eyed Peas:
- In a large pot, soak the beans in double the amount of water for at least 4 hours or overnight.
- Drain and rinse the soaked beans before adding to a large cook pot. For every 1 cup of soaked beans, add 3 cups of fresh water.
- Bring pot to the boil, reduce heat to a simmer, cover and cook for 45-60 minutes or until tender.
- Drain the beans, season and serve.
