Description
Raw buckwheat is a light tan in colour, with a slightly greenish hue and are shaped a bit like a pyramid. When raw, it has a soft, crumbly texture with a mild flavour but has a lot of starches to it.
Because of that starchiness when ground and used as flour, it often doesn’t need xanthan gum to hold it together like other gluten free flours do.
You can use them as groats for making porridge (instead of oatmeal) as a gluten free alternative. Try using them in place of barley in soups and stews also!
Give them a light toast in a dry pan for a few minutes to give boost that nutty flavour & texture. Sprout them for use in salads raw or just eat raw buckwheat without boiling, as they are definitely soft enough.
