Description
Raw cacao powder is made by cold pressing the un-roasted cacao beans. The process keeps the living enzymes in the cacao and removes the fat (cacao butter).
Cacao beans develop flavor and texture through the fermentation process. From there they are processed into either cacao or cocoa powder. Fermenting and roasting cacao is also the first step in making chocolate.
Cacao powder is quite bitter but retains more of the cacao bean’s original nutritional value.
