Surprisingly, cashews aren’t classified as a “true” nut. The shell-covered edible kernels that grow off the tree’s pear-shaped fruits are known as “cashew apples”.
The shell of a cashew nut contains a poisonous, oily liquid that can cause blisters on the skin. So, all cashews sold commercially will be shelled and processed by either roasting or steaming to remove the oil.
