Cream of tartar — also known as potassium bitartrate or potassium acid tartrate — is the potassium acid salt of L-tartaric acid, which is naturally present in wine!

Description

Cream of Tartar (also known as Tartaric acid) is used in a lot of baking recipes as a stabilising agent. Adding a small amount of it to egg whites (about 1/8 teaspoon per egg) speeds up the whipping process.

It also helps stabilize the structure the meringue allowing for a taller meringue.

It has an acidic but pleasant taste, and you may find it in the spice aisle of your grocery store as a white, dry powder.

Cream of Tartar is commonly used as:

  • Anticaking agent
  • Antimicrobial agent
  • Leavening agent
  • Control agent for pH
  • Stabilizer and thickener

It can be used as a substitute for anything from buttermilk to baking powder and lemon juice in your favorite recipes.
