Description
Cream of Tartar (also known as Tartaric acid) is used in a lot of baking recipes as a stabilising agent. Adding a small amount of it to egg whites (about 1/8 teaspoon per egg) speeds up the whipping process.
It also helps stabilize the structure the meringue allowing for a taller meringue.
It has an acidic but pleasant taste, and you may find it in the spice aisle of your grocery store as a white, dry powder.
