Description
Freekeh is an excellent source of protein, fiber & manganese as well as being incredibly versatile. It has a nutty flavour with a chewy texture similar to bulgur or barley, but with a smokey flavour due to its fire roasting process.
You can add green wheat to soups and stews, use it as a substitute to rice, pasta or quinoa or swap it in a tabooli.
How To Cook Freekeh:
- Rinse the grains to remove any dust and debris
- Add grains to a pot with water and a touch of salt or stock if you prefer. For 1 cup of grains, add 2½ cups of fluid.
- Bring pot to the boil, before reducing the heat to low and simmer for 35-45 minutes or until tender.
- Stir occasionally to prevent sticking.
- Drain any excess liquid, fluff the grains with a fork and allow to sit, covered for a few minutes before serving.
Storage: Store in an airtight container in a cool, dry spot away from direct sunlight.
