Description
Ground ginger is made from pulverized, dried ginger root. As a dry spice it can be substituted for fresh ginger in dishes like curries, stews, or braises.
When using as a substitute for fresh, or vice versa, the ratio is about 6:1 fresh to ground as a general rule. Dry ginger spice is much more pungent than fresh ginger.
Keep in mind that fresh ginger doesn’t work that well in baking applications.
