Guar gum is used in food products but is also used in cosmetics, medications, textiles, and paper products.
It has properties similar to xanthan gum, including thickening and emulsifying ingredients as well as retaining water and preventing syneresis (the separation of liquids and gels)
It is also often used in ice creams to prevent crystal formation.
The normal ratio as a thickening agent is 0.1-1.25%, even if used in conjunction with other ingredients. If you add too much guar gum to a dish it can take on the flavor of dried beans.
Storage: Store in a cool, dry area in a sealed container away from direct sunlight.
