As well as being high in protein, haricot beans are also a great source of iron, folate, thiamin, and magnesium. Which makes them an excellent addition to a healthy diet.
Like many other legumes, they benefit from pre-soaking before cooking. Pre-soaking the beans speeds up the cooking process & softens the skins to allow more absorption during the cooking process, giving you a creamier texture.
How To Cook Haricot Beans:
- Place beans in a large pot and cover with plenty of water. Allow the beans to soak for 12 hours or overnight.
- Drain and rinse beans before transferring to a cook pot.
- Cover the bean with 5cm of water or so and bring the pot to a boil before reducing to a simmer.
- Partially cover the cook pot and allow the beans to cook at a simmer for 1-1.5 hours or until tender.
- Drain and serve once done.
Tips: Try and avoid adding salt and seasonings during the cooking process at this can create a “tough” texture to the beans.
Storage: Store dry haricot beans in a cool, dry spot away from direct sunlight.
