Description
Lima beans (sometimes known as butter beans) have a mild flavour and come in a variety of colours. They cannot be eaten raw and must be cooked before consumption.
Pre-soaking the beans also help to remove some of the gas producing side effects as well as reducing the cook time.
How To Cook Lima Beans:
- Sort through the beans, discarding any discoloured, wrinkled or broken beans.
- In a large bowl, pre-soak the beans for 8h or overnight. For 1 cup of lima beans, add 4 cups of water to soak. Discard any beans that float to the top.
- Rinse and drain the bean, repeat this until the water runs clear.
- Add beans to a pot and cover with water (about 4cm above the beans)
- Bring water to the boil, reduce to a simmer, stirring occasionally and cook for 50-60 minutes or until tender.
- Strain, season and serve immediately.
