Mung beans are highly nutritious and a good protein source for a plant-based diet. They also contain fiber and iron and are low in saturated fat.
Unlike other dried legumes, they don’t need to be pre-soaked before cooking. Some recipes do recommend pre-soaking them to ensure they are soft and creamy once cooked.
You can also sprout the beans and add them to fresh salads, sandwiches or add as a garnish to dishes.
How To Cook Dried Mung Beans:
- Rinse beans under water to remove any dust or debris.
- Add beans to a pot and cover with water or stock. The general ratio for un-soaked dry mung beans to fluid is 1:3.
- Bring pot to the boil then reduce and simmer for 30-45 minutes or until tender.
- Drain and serve immediately.
