Wholegrain stone ground flour is often used for artisanal bread making as it often provides a better texture.
It also generally has a higher gluten content, typically between 11%-15%. This extra gluten content creates a better structure in bread making.
However, because of its higher gluten content, it doesnt work well with other baking recipes.
Cakes and muffins made with stone ground flour will be dense and chewy.
