Add the powdered pectin to fruit or fruit juice before you boil it for the specified by your jam recipe.
After boiling, the sugar is then added to the jam or jelly. Adding the sugar just at the end will begin the gelling process to give jam its firm texture.
Using enough sugar and an acid, like lemon juice, encourages a firmer texture. Fruits with only a small amount of natural pectin will never set as firm as a jam made with high pectin fruits like apples, plums or gooseberries, unless you add in extra pectin.
