Description
Red kidney beans can be used in various dishes, such as chili recipes, refried beans, soups, and salads. They must be well cooked before being eaten, if they are improperly cooked or raw, kidney beans are toxic.
Red kidney beans are a great source of protein (17g per cup) and are high in dietary fiber, antioxidants and have a low GI rating.
They make an excellent addition to soups, salads and chili bowls. You could even try making your own refried beans with them.
How To Cook Dried Red Kidney Beans:
- In a large bowl, cover beans in water and pre-soak beans for at least 5 hours before cooking, or overnight. For every 1 cup of beans, add 4 cups of water.
- Drain the beans and add to a large pot or Dutch oven, add 5 cups of water (if you pre-soaked 1 cup of beans)
- Bring pot to the boil and cook for 5 min.
- Reduce to a simmer and allow to cook for about 45 – 60 minutes or until tender.
