Red lentils taste milder and sweeter than other lentils, such as green and French du Puy. They have the quickest cooking time of any lentil, just 10 to 15 minutes (depending on preference of texture).
There is no need to soak whole red lentils before cooking, just a quick rinse to remove any dirt and debris before cooking.
When cooking whole red lentils, you should opt for a ratio of about 3 cups of water per 1 cup of dry lentils.
You can boost the flavour by cooking them in stock or adding spices like cumin seeds, paprika, garam masala, or curry powder works well.
