Wholemeal spelt flour has a coarse texture with visible brown flecks mixed in amongst the white. It is comparable to wheat flour in its texture and density, its relatively high protein content makes it suitable for making hearty breads and muffins. It’s also sometimes used for making pasta.
Spelt flour is a popular choice in bread making as it has a similar gluten content to that of bread flour. However, you can lose that gluten structure if you overwork the dough.
If you want to try making spelt bread, try substituting 25% to 50% of your total mix with spelt. This lower percentage makes the dough easier to work with.
